This course explores food by focusing on the role science of nutrition and public health policies have had in the Americas since the nineteenth century. Food and nutrition policies became the cornerstone of a healthy and productive workforce and, therefore, central to the process of nation-state formation and modernization. Health and nutrition experts targeted women and the poor in their campaigns to transform daily habits. Throughout the semester, we studied the meaning of food for different societies on this continent and what cooking and eating practices can tell us about race, class, gender, power, colonialism, and identity.
